Tio Uco is 100% Tinta de Toro (Tempranillo), growing in clay and limestone soil, sourced from three sites in Toro. Hand harvested and de-stemmed, there is a 24-48 hour pre-fermentation maceration, followed by a native yeast fermentation and 20 day maceration.
Alvar is making unusually fresh wines in Toro using organically farmed 25-40 year old vines. With only a gentle maceration, the wine is aged for 5 months in neutral French oak barrels.
Aromas are wild and heady, full of fermenting berries, black cherry compote, incense and clove, with a jazzy, light opening, dissolving into a fun and full flavoured palate of cassis, cranberry, cola, salt plums, balsamic, wild rose, and bitter herbs on the finish.
Substantial and spicy, but light on its feet, this is a lovely Toro for everyday drinking pleasure.
